I went to a little get-together the other night and had this delicious taco soup! It’s a super-easy recipe…so, of course, it’s perfect for me! It’s still pretty hot outside, but I’m anxious for fall and soup. So I just ignored the 85-degree temps today and went for it!
taco soup
2 lbs ground beef
1 packet taco seasoning
1 packet Ranch seasoning
1 can corn
1 can kidney beans
1 can black beans
1 can Ro-tel
1 large can diced (or crushed) tomatoes
Brown beef with both packets of seasoning, then just add all the rest and combine. Simmer as long as you can wait! :) I made it about 20 minutes. I served mine over tortilla chips, topped with shredded cheese and sour cream.

I was just about to ask you for the ingredients. :) :) That looks absolutely delicious. We also love making soups in the fall. I'll definitely try this one out - and like you ignore the hot weather. I'm not sure what you are talking about with 85 degrees - we've been working outside (in the sun) and it feels more like 100 :)
ReplyDeleteLurve me some Taco soup! It's a staple around our house during the Fall football season, but I haven't even made the first batch of the season yet. My recipe is slightly differenct, but still wonderful!
