Another low carb goodie…

I like to call these sausage and cheese “bites”…not the other name for a similar appetizer treat. :)

The only thing you have to do to make this low carb is just leave out the Bisquick.  Super easy.

Ingredients:

  • 1 package of your favorite bulk sausage…I use Jimmy Dean Maple flavor, but I’ve also used the “hot” variety and it’s great, too!
  • 1 package of shredded cheddar cheese.

Mix thoroughly with your hands (EWWW!) form into 1-2 inch “bites”.  I can get exactly 30 out of one batch.  Space evenly…you can get them pretty close…on a cookie sheet lined first with foil and then with parchment.  The foil keeps the grease from the pan, and they won’t stick to the parchment.

Cook at 400 degrees for about 25 minutes.  Let them cool a little on the sheet, so the melted cheese can get crunchy.  Remove to some layered paper towels to drain. You can either eat right away or let them cool completely and keep in a baggy in the fridge.  Pop a few in the microwave (about 30 sec) for breakfast or lunch…or just a snack!  Mmmmmm!
