Low carb delight…

As some of you may already know, I’ve recommitted myself to the low carb “lifestyle”.  It’s really not a diet, but a total change in the way you eat.  About 7 years ago, I got tired of being fat.  I had gained about 50 pounds after getting married just 4 years before.  I decided to try the Atkins diet, which was all the craze at the time (2003).  I didn’t lose ANY weight for the first couple of weeks and got sort of discouraged.  But then those first few pounds came off and I was hooked!  I never had a drastically fast weight loss, like some people do when they are “low carbing”.  But over the course of about 9 months, I lost nearly 60 pounds!  Even better, my cholesterol dropped from 225 to 175!  And the best part was, I kept it off for about 3 and a half years…until I started fertility drugs and got pregnant.  Then I managed to gain almost 70 (yes, 70!!!) pounds while I was pregnant. 

Soon after I had Caroline, I’d managed to drop about 20 pounds.  But that was really just baby and water weight.  Last January I recommitted to low carb, and lost 15 pounds.  I was still 35 pounds shy of my pre-baby weight. 

Then, I don’t know what happened.  I gained back about 20 pounds.  I just ate CRAP all the time and didn’t really care.

Now I’m really fat! 

So four weeks ago, hubs and I decided to go for it again.  Tomorrow will be my 4-week weigh-in, and so far (as of yesterday) I’ve dropped 10 pounds.  Not bad, I guess.  The depressing news…hubs has lost 18!!  Men suck. :(

I still have a LONG way to go.  Ideally, I’d love to get back to pre-baby weight…which means I still have 46 pounds to lose.  And you’d be surprised to learn what that magic number is.  It’s probably much higher than most people’s magic number.  Maybe someday I’ll be brave enough to share what it is.  Maybe.

Anyway…here’s the point of this post.  I remembered one of my much-loved low carb treats!!  Peanut butter cookies!  The best part…only 3 ingredients!

ingredients 1 

  1. cup of crunchy peanut butter (Peter Pan is the lowest carb…3 net g per serving)
  2. cup of Splenda (I use the Wal-Mart Great Value equivalent)
  3. 1 egg

Mix them all well, roll into 1-2 inch balls, flatten with a fork and sprinkle a little Splenda on top.  Bake for about 7-8 minutes at 350.  Do NOT over bake.  Take them out a little soft and they will set up.  They are a little on the crumbly side, because there’s no flour.

They are DELICIOUS! :)

**Nutritional info…this is just my calculation.**

1 cup of Peter Pan crunchy contains 24 net carbs (carbs-dietary fiber).  The Splenda has negligible amounts of carbs.  The egg has no carbs.  One batch makes about 24 cookies, so each one has 1 carb. 

Again, these are just my own calculations.  I’m only going by the labels on the ingredients.  Of course, you should NOT eat the whole batch at one time! :)

  1. Yummy! Defintiely better than the ricekrispy treats I made last night...just my official farewell to the icky things I've been ingesting for the past two years. Dropped quite a bit of weight after having Garrett, but a year later...well, it's not pretty. I'd love any and all recipes you have for great-tasting, low-carb treats, meals, appetizers, etc. Also, any recommendations for websites that have these? WeightWatchers is just about portions, not carbs...

  3. Love this!!!! Can't wait to see how skinny you get ... even though you'll ALWAYS be gorgeous! And fyi .. my 'skinny' number is still way high for most people. I refuse to say it out loud, but I bet we're probably in about the same boat. Go girl!!!! :)

  4. So, I'm a random blog reader that you don't know (I occasionally read yours from Laura P.'s), but wanted to encourage you about losing your 70 pounds. I also gained 70 pounds while pregnant! It took me a year to lose it and then I've lost about 5 more pounds past that. I'd still like to lose about 10 more, but I'm getting there. Just wanted to say that you can totally do it! :-)

    And I never tell anyone my weight either...my husband is the only one who knows! Silly how us girls are like that, huh?
